Halo-halo
While in Angeles City, indulging in Pampanga’s halo-halo (where 'halo' literally means 'mix,' creating a delightful blend of various ingredients) is an absolute must. The renowned Kabigting’s offers a sumptuous halo-halo boasting a medley of sweetened banana, beans, corn, macapuno, and pastillas, all crowned with finely shaved ice and infused with milk. Distinct from the commonplace halo-halo found across the country, Pampanga takes pride in serving the creamiest and most flavorsome rendition of this beloved Filipino dessert.
Compared to other versions, Kabigting's halo-halo may seem modest with its minimalistic presentation and subdued colors. However, the true revelation lies in its taste. Once you experience the velvety and delectable flavors of Kabigting's halo-halo, it's quite likely that you won't settle for any other rendition.
To provide a glimpse into the origins of this exquisite halo-halo, let me share a snippet from a blog on Pampanga Directory.net:
In the early 1970s, Geraldine Kabigting, sister of Jacinto Kabigting, suggested to her brother to experiment with an unconventional flavor for halo-halo, moving away from the traditional tropical fruit combinations. The result was a unique concoction featuring Carabao’s milk for a caramel touch, cream of corn, and beans, slow-cooked for a day to achieve a sweet taste.
The fame of Kabigting’s Halo-halo soared when Susan and Johnny Medina, who lived nearby, sampled this innovative flavor. Subsequently, the documentary story aired on Travel Time with Susan, attracting international attention and making Kabigting’s Halo-halo a sensation. From ordinary locals to notable figures like politicians Tessie Aquino-Oreta, Lilia Pineda, and Dong Gonzales, as well as celebrities like Chesca Garcia and Angel Aquino, Kabigting's Halo-halo has garnered widespread acclaim. The media, including ABS-CBN Crew and Jessica Sojo, and even former President Gloria Macapagal-Arroyo, have personally visited to savor the renowned Halo-halo.
