Toll House, Angeles City

You can't claim true Angeleño status without recognizing Toll House, a culinary institution that predates many of the trendy establishments familiar to today's millennial Angeleños. Since my arrival in Angeles City in 1997, Toll House has been a reliable haven for hungry students, particularly those from Holy Angel University, conveniently situated nearby, and a diverse array of patrons from all walks of life.

Toll House is more than just a restaurant; it's a sanctuary that serves up comforting dishes, evoking a sense of familiarity akin to the city itself—a place that beckons us home, regardless of our wanderings to other locales.

The restaurant bustles with activity, with some patrons opting for quick takeaways of cakes and meals, while many others choose to dine in, reveling in the warm, inviting atmosphere that permeates the establishment.

The recent opening of a branch in Marquee is a welcome expansion, allowing Toll House to reach an even wider audience. The vibrant and inviting ambiance of the place mirrors the warmth and charm that Toll House is renowned for.

Toll House has made a mark with its rich and creamy baked macaroni and baked spaghetti, drawing crowds eager to savor their delectable pasta dishes. However, if I were to recreate these classics, I'd lean towards a cheesier, butterier sauce with a touch more saltiness, as their versions tend to be slightly sweet for my palate. 

While traditionally bechamel sauce combines butter, flour, and milk, my twist involves omitting the flour and adding more cheese for an enhanced flavor profile.
